The above parole sums up very well the philosophy behind the Slow Food, a worldwide grassroots organization, present over 15 years on the Balkans to prevent the disappearance of local food cultures and traditions.

Slow Food goals are simple to understand: good food, gastronomic pleasure and a slow pace of life.

Slow Food develops a concept of gastronomy as a multidisciplinary approach to food that recognizes the strong connections between plate, planet, people and culture.

Slow Food envisions a world in which all people can access and enjoy food and their approach is based on a concept of food that is defined by three interconnected principles: good, clean and fair.

  • GOOD: quality, flavoursome and healthy food
  • CLEAN: production that does not harm the environment
  • FAIR: accessible prices for consumers and fair conditions for producers
